Last weekend, we visited Master Yu, the traditional lacquer craftsman, in his home-workshop in Baiyangping Town, on the mountains near Enshi. He treated us with the novel spring handmade green tea made by his wife, from their family gardens. It's a truly traditional homemade tea crafted in the old-fashioned way. I'm sipping it right now. The tea leaves are extremely tender and primitive in their curly appearance, a result of baking them in kitchen woks. It tastes a bit bitter at first sip, but immediately leaves a sweet aftertaste once you swallow it. The flavor is delicately vegetal, with a hint of freshly cut grass, which gives it a natural and earthy charm. The color of the tea soup is sparkling green-yellowish. Even after six rounds of brewing, the color remains remarkably stable and the tea infuses quickly. This is the best homemade green tea that I've ever tasted in China.
